Tuna Potato Pie

This is my version of fast food. You can prepare in advance and freeze them. When ready to serve, thaw it, pop in the oven and you can have a piping hot potato pie in no time. This dish can also last for many weeks in the freezer. They are especially great for your hungry kids.

Cloves of garlic roasted in the oven

2 cans of  tuna chunks in water and 2 eggs

Mash boiled potatoes and mix with roasted garlic, pepper, butter, eggs and tuna chunks until well combined

Scoop enough tuna potato mixture into ramekins and sprinkle some dried Italian herbs on top (optional)

Baked in ramekin for easy servings


Tuna Potato Pie

Fast food for your hungry kids

Ingredients
  

  • 2 kg potatoes
  • 1 tsp salt
  • 3 cloves of garlic
  • 2 cans of tuna chunks in water
  • 2 eggs
  • 50 g soft butter
  • Dried Italian herbs optional

Instructions
 

  • Add salt and potatoes to a pot of water and bring it to a boil until potatoes turn soft
  • Spray some cooking oil on 3 cloves of garlic wrapped in aluminium foil
  • Roast in the oven at 200C for about 10 mins
  • Remove the skin and any burnt parts of the roasted garlic
  • Mash the boiled potatoes, roasted garlic, pepper and butter until well combined.
  • Drain the water from tuna cans and add to the mashed potato mixture.
  • Crack eggs into the mixture and mix all the ingredients thoroughly.
  • Scoop enough tuna potato mixture into ramekins or baking dish
  • Sprinkle some dried italian herbs on top (optional)
  • Bake in a preheated oven at 200C until golden brown

Notes

  • Recommended to prepare in ramekins for easier servings size and storage in the fridge
  • These can be prepared in advance and last in the freezer for weeks.
